TSOU-MA-LAI FARM OF TAINAN COUNTY FARMERS' ASSOCIATION

Tainan County Farmers' Association's Tsou-Ma-Lai Farm was officially opened on January 23, 2003. It is based upon model foreign winery estates that combine tourism with wine making.

By operating its tourist winery as part of the nation's premier leisure farm, Tsou-Ma-Lai Farm adds fresh sparkle to both wine and recreation.

Visitors here can gain escape the office to gain an inside look at traditional framing while savoring some of Formosa’s finest wine.

Tainan County is a major agriculture producer with the nickname of "Kingdom of Fruit" that is blessed with perfect conditions for wine making. But this have been a long-kept secret since past governments in government maintained strict state monopoly control over the manufacture and distribution of wines, beer and alcohol which often led to spoilage of bumper crop harvests of fruit.

This has largely changed since agricultural producers such as the Taiwan County Framers’ Association can become licensed wineries ever since the nation joined WTO. And with this, Tsou-Ma-Lai Farm became the first legal tourist wine estate in Chiayi and Tainan Counties.


CHANGHUA COUNTY BREWERY TOURISM RESEARCH AND DEVELOPMENT ASSOCIATION

Changhua County Brewery Tourism Research and Development Association is established to promote the healthy development of the local wine making tourism culture by combining agricultural production, winery tourism, and recreation. The association aims to increase added value and international competitiveness for locally made agricultural products.

Peng Chun Hang winery is one member of the association and is located inside the Erlin vine estate. Peng Chun Hang takes pride in the specially developed grapes that are grown on its estate and offers a guarantee of basic quality.

 

Peng Chun Hang's line of quality white wines are fermented from four prime choices of grapes under carefully controlled processes according to the special characteristics of each variety of grape.

Peng Chun Hang recommends the wine be consumed when iced. Its wine carries the aroma and sweetness of honey with a texture similar to ice wine. Peng Chun Hang believes that discriminating consumers will delight in its collections.

The Puli Farm Association Rural Village Leisure Distillery's location includes Liyutan ("Carp Lake"), which has been coined "Little West Lake," after China's famous freshwater lake. The winery is amongst nine wineries that emerged with the guidance of the Executive Yuan's Council of Agriculture (COA) and the 921 Earthquake Post-disaster Recovery Commission.

Combined research and development efforts have produced three different types of wines, which utilize Puli's most representative local farm products as their main ingredients, including fresh passion fruit juice (24-proof-12% alcohol) Pailipiaohsiang ("Fragrance Floats the Distance"), pine needle essence infused into their 78-proof Miwusenlin ("Fog-shrouded Forest"), and the sweet aromas of their 32-proof Chenchingmeikuei ("True Love Rose"). Of these, the latter two wines have even obtained the bronze awards at the COA's second Rural Village Wine Quality Competition.


SHIN-YI HSIANG FARMERS' ASSOCIATION

The Shin-Yi Hsiang Farmers' Association is located in the country's largest region of plum farms, as well as the ancestral home of the Punong tribe. The association's line of plum wines includes such names as Meitzutiaowu ("Dancing Plums"), Wangchihuichia ("Forgot to go Home"), and Changlaoshuohua ("Grow Old Talking"). Also among their offerings is a traditional Punong tribe millet-based wine called Hsiaomichangke ("Singing Millet"), Shanchumilu ("Lost Mountain Boars"), and other peculiar names inspired by aboriginal culture that give the products their lively nature.

 

According to legend, at one time during Taiwan's Japanese period, there was a very good winery named Grandma Wuma. Even though the Japanese authorities prohibited her from wine making, Grandma Wuma continued to do so secretly at home, taking advantage of the pitch dark conditions of the night to avoid being caught.

When she finished her products, she would take the wine dregs in the middle of the night to secretly discard in the nearby mountain valley. According to the account, a group of mountain boars were attracted to the fragrance of the wine dregs and followed their noses to the door of Grandma Wuma, whereupon they forced themselves inside. Since then, the tribal people near Grandma Wuma have jokingly called her wine "Lost Mountain Boars."

Yu San Wine Shop, also known as the Vegetable Production Association of Singyi, Nantou County, was established by farmers in the area and has for many years received subsidies from the Cabinet-level Council of Agriculture (COA) and the Nantou County Government. The shop was recognized as an outstanding wine shop by the COA and the CAS Association in 2005 and 2006.

The company's famed product is its special plum wine. The wine is made from selected plums fermented at a low temperature. This process retains the natural plum fragrance in the wine, which has a sweet and sour taste to delight taste buds. The wine is of the highest quality among plum wines of other brands. Add ice in the wine and it will become even more enjoyable. The fragrance and taste of the wine will make you forget about your worries and troubles.

Another product of the wine shop is the bamboo charcoal kaoliang wine, which uses bamboo charcoal to absorb the methanol and aldehyde substances during the fermentation process to make the wine even more tasteful and savory.

Dahu is located in the southern part of Miaoli County. It has plenty of sunshine in the autumn and winter, and rarely has rain. The yearly average temperature of 20 degrees Celsius have made Dahu the perfect place to grow strawberries. Over the years Dahu has become a famous place for making strawberry wines, and the Dahu Wineland Resort was built in the township to attract visitors from all over to retreat from the world.

Strawberry and plum wines produced by the resort do not have any artificial additives, thus retaining the wines' original taste and flavor. When tasting a strawberry or plum wine, the customer should first "nose the wine" to take in its aroma, then sip and savor its character. For the best in tasting, it's advised that the wine be chilled for 15 to 20 minutes before decanting.

This wine-tasting center, built from an antiquated granary, doubles as a recreational resort. Its large arched windows ensure proper lighting and its rear garden is planted in the style of western Europe to make it the perfect place to taste wine and chat with your friends.

Monthly Pick: Wine-testing techniques

Wine-testing is a special skill. Only through years of experience can one become a wine-testing specialist.

It's important to remember that the tester needs to hold the foot of the glass. Otherwise the warmth of the hand may affect the taste of the wine.

There are several steps in testing wine. First, the tester needs to observe the color and clarity of the wine. The color and clarity of the wine will indicate several things about the wine, including its brand, year and quality.

The tester should then shake the glass gently for several reasons. First, shaking allows the aroma of the wine to come out. Shaking also allows wine residue to stick to the wall of the glass. The more residue that sticks to the inner side of the glass, the denser the wine. The tester should then smell the wine. The tester should bring the glass to his nostrils and smell the aroma that is coming out of the wine. This is another technique to determine the quality of the wine.

Finally, the tester should taste the wine. When tasting, the tester should swish the wine to each part of his tongue to taste its sourness, sweetness, bitterness and saltiness. He should then swallow the wine and experience the smoothness of the wine.

Food goes with the wine

Different wines go with different foods. When choosing the type of food to go with the wine, the following should be taken into consideration: the sauce of the main dish, the side dishes, and the way the main dish is prepared.

Wines that are stronger should go with foods with heavier tastes. It's important to know that the tastes of the wine and the food should match. Incompatibility of wine and food may cause discomfort for the diner. When there is more than one type of wine, it's important to know the order by which the wines are served. Usually, lighter wines should be served first, followed by stronger wines.

The following are general tips for choosing the food to go with a particular wine:

1. White wines should go with white meat (pork, chicken or seafood).

2. Red wines should go with red meat (beef, venison, duck or tuna).

3. Sweet wines should go with desserts.

4. Food that is sour or strong in taste, or smoked food, should go with stronger wines.

5. Greasier food should go with wines that are sour.

6. Low-fat food should go with wines that are fresher in taste.

7. Salty food should go with sweeter wines.

8. Hot and spicy food should go with low-alcohol wines or wines that are fruitier in taste.
